Description

This is derived from seaweed is probably best known for its use in Japanese desserts but other cultures also use it in desserts. It is flavorless and sets clear. Agar gels more firmly than gelatin from animal tissue and sets and melts at a higher temperature. You can set it at room temperature in about an hour.
A teaspoon of agar agar is usually used as the equivalent of a teaspoon of animal derived gelatin. Agar can also be remelted if necessary.
